Chinese Dumplings: Won Tons*

We will make Chinese dumplings with pork filling made from scratch in class! You will learn the multiple styles of folding dumplings using won ton wrappers. Then we will boil the won ton to make a classic won ton soup or chili oil won ton. Additionally, we’ll learn to make our own Sichuan-style chili oil and learn about other common Chinese condiments used for dipping sauces.

Please mark your calendar for Saturday, Oct. 26 just in case a storm makeup is needed. Limit 12 students.

Harvest Night: Alumni of Worm Composting Workshops

This class is for alumni of Jock's previous worm composting workshops. The instructor will have six sets of harvest equipment so that many alumni can harvest at once. The first round will start at 6 PM and a second round will start as the first round is completed. We have to be cleaned up and out by 8PM.The instructor will bring all the equipment and supplies needed to harvest the worm bins. Students will bring their worm bins to harvest. One worm bin per student is recommended to give more students a chance to harvest. The instructor will assist those that need help and give suggestions to improve results where appropriate.This is also an opportunity to meet others that have been worm composting and compare experiences (successes and failures, problems and solutions.)

This class is for those who are new to investing or would like a strategy refresher.

We will discuss basic rules of investing: how to develop a plan, how to choose quality investments, how to diversify your portfolio, and most importantly how to invest for the long term and focus on the things that YOU can control.

Pastels for All Levels

In this class, we will explore the medium of pastels to create vibrant and luminous paintings. In addition to learning the techniques of painting in pastel, students will experiment with using expressive color in a variety of subject matter, with a concentration on landscapes. The principles of composition, design, value and color will be integrated in all sessions and the care and framing of pastel paintings will be explained. Beginning and more experienced students are welcome! Limit 10 students.

Coastal Maine Botanical Gardens - Fall Trip

Coastal Maine Botanical Gardens is a botanical garden located in Boothbay, Maine. Opened in 2007, these gardens have been named one of Maine's top attractions. Its gardens and landscape include nearly a mile of tidewater shoreline.

We will be meeting at Waterville Senior HS by 10:30am then heading to Boothbay via a Cyr bus (bathroom on board) and arriving at noon time at the Botanical Gardens. There is a cafe on-site to purchase lunch (please bring card or cash with you) and you will have a little over 3 hours to roam the gardens at your leisure.We will meet back at the Cyr buses parked location at 3:30pm and leave by 3:45pm to arrive back at Waterville Senior HS by 5pm. 

One Botanical Garden Ticket and bus transportation are included in your registration fee. No refunds will be given after September 30.

Reiki is a Japanese based, hands-on healing technique for stress reduction and relaxation that promotes natural healing. Learn how to use your hands to bring comfort and healing to yourself and others. Reiki balances and energizes all systems of the body and facilitates the relief of physical, mental, and emotional symptoms. It heals from the root cause and is compatible with all healing methods. This class will include what Reiki is, the history, and how it works. There will be ample time for hands-on practice. Students must attend all four sessions in order to receive Reiki certification. Limit 8 students.

Rug Braiding II: One Table Runner*

Fifty years ago, the instructor’s grandmother taught her how to braid rugs. She still uses two of her grandmother's rugs at home. Many believe that braiding rugs began in colonial times, but the availability and cost of fabric would have made it beyond the means of most early settlers. But, by the 1820s mechanical looms were being developed and reasonably priced fabric for clothes and home decor became common. Rug braiding then became a very popular pastime as well as a way to help keep one’s house warm.

You are welcome to bring your UFOs (Unfinished Objects) if you would like help. Otherwise in this class you will make a table runner, which will help you perfect your braiding and lacing skills. Prerequisite to sign-up: Rug Braiding 1 or previous experience. 

There is a $25 materials fee, separate from the registration fee, due to the instructor the first night of class for the rug braiding kit. Your kit will include a minimum of three colors, a lacing needle, and other small items.

Please bring your own:

  • scissors
  • braiding clamp
  • dark rug lacing twine
  • a needle with a large eye to sew your wool strips together
  • spool each of light and dark duel duty sewing thread.

Easy to get at Yardgoods Center & they have a 10% discount if you mention this class. There will be no class on Oct. 31. Storm makeup will be Nov. 21.
